In the past 3 years I have been in several Eco and Holistic Projects, and I was given the opportunity to be responsible for the kitchen in a community-based project in Greece:
– I have learnt a lot on local/seasonal ingredients
– I have learnt to grow my own food (Permaculture/Natural Agriculture)
– I have learnt to go Zero Waste
– I have learnt to forage for wild edible ingredients
My dishes have become more nutritious and at the same time more easy to prepare, and affordable for everybody!
As a result of that, a digital book of (vegan and sustainable) recipes & stories about visitors who left the 9-to-5 life has been published in September 2016. Co-written with friend and journalist Rita Imwinkelried.
